How To Cook With The Top Food Trends For 2022

COMBI-STEAM OVEN BAGELS (Makes 8 bagels)
Ingredients:
1 ¼ cups lukewarm water
2 tsp sugar
2 tsp instant-rise yeast
3 ½ cups bread flour
1 ½ tsp salt
1 egg white, lightly beaten
Toppings: Sesame seeds, poppy seeds, flaky salt, onion flakes, caraway seeds, chili flakes, etc.

Directions:
1. Place yeast and sugar in the bowl of a standmixer and add the water. Let rest until yeast begins to bubble. Add the flour and salt, and with the dough hook attachment, knead the dough until it becomes smooth and elastic –about five to seven minutes. Roll the dough into ball, and place into a greased bowl.
2. Set the steam oven to the “Proof” function, and proof the dough for about 30 minutes until it has doubled in size.
3. Set the steam oven to “Steam” at 100% humidity.
4. Line a tray(s) with parchment paper. Take the dough and cut it into 8 equal pieces. Roll each dough into a ball, and using your fingers or the handle of a wooden spoon, poke a hole in the middle of the dough, and shape it into bagel by gently stretching and pulling the dough. It should be about 5cm in diameter. Place the bagels on the tray with about 2 inches of space around each bagel.
5. Steam the bagels for six minutes.
6. Reset the combi-steam oven to 400F with 60% (or medium) humidity.
7. While the oven heats, brush the bagels with the egg white wash, and garnish with toppings.
8. Bake the bagels for 12 to 15 minutes, until golden brown.

MISO-CHILI OIL (Makes 1 cup)
Ingredients:
2/3 cup vegetable or canola oil
½ Tbsp brown sugar
1-2 Tbsp sesame seeds
1 Tbsp soya sauce
5 garlic cloves, minced
1 Tbsp fresh ginger, minced
2 Tbsp red pepper flakes
2 Tbsp gochugaru
2 Tbsp miso paste
3 Tbsp sesame oil

Directions:
1. In a glass or stainless steel bowl, mix together the sugar, sesame seeds, soya sauce, minced garlic and ginger, red pepper flakes and gochugaru.
2. Gently heat the oil in a small saucepan over medium heat until it reaches 350F.
3. Remove from heat and slowly pour the oil over the spice mixture.
4. Stir in the miso paste and sesame oil.

    Please, no more food trends. That’s what raised the prices of chicken wings, oxtails, pork belly, and too many other things people were making forever until a "certain group" got hold of it and made it trendy 😒

    Vegetable oil is poisonous. It is responsible for macular degeneration and other pathological conditions. Human ingestion of cytotoxic and genotoxic aldehydes potentially induces deleterious health effects, and high concentrations of these secondary lipid oxidation products (LOPs) are generated in polyunsaturated fatty acid (PUFA)-rich culinary oils during high temperature frying. It is proven science. Instead of promoting harmful cooking methods you should rather teach people about healthy cooking. Steam cooking is fine, actually. It is better than any other cooking method.
